Shareef Malnik had been kind enough to open the doors to his Miami Beach steakhouse The Forge for a cover and feature shoot that would capture the love between the restaurateur and his ridiculously beautiful wife actress Gabrielle Anwar. On the surface the situation seemed well in hand. We had determined our shot locations inside the iconic restaurant. Our stylist had pulled a pair of flowing Etro dresses for Anwar which she adored. And the happy couple appeared ready to roll. There was one problem We didn t have a photographer. He was somewhere on the other side of town stuck in one of those bumper-to-bumper nightmares that can turn a Zen master into a raging New York cab driver inside of 30 seconds. I knew we were in trouble when I found our creative director Melanie Smit pacing outside the restaurant oblivious to a late-afternoon downpour. In her own Zen-like way she may have been begging the traffic gods to smile on us. They did. We re not exactly sure how photographer James Woodley reached The Forge in the nick of time-- and to be clear we don t condone whatever rules of the road he broke to make it happen. We just know that in an instant he had set up his camera and established a rapport with our gracious hosts as it turns out James and Gabrielle were born at the same hospital in England. Go figure. What makes our cover story even more special is that it s part of a new chapter in Lifestyle history. Sometimes he speeds along the calm Middle River or for a bigger challenge he ll go up against the waves in Port Everglades. Smart recently finished a challenge on social media where he competed against other paddle enthusiasts to log 500 miles in 100 days. The Wilton Manors resident isn t just passionate about the watersport most view as a leisure activity-- he s a professional. Smart is part of a worldwide paddleboard team sponsored competitively by NSPSurftech which includes teammates from Australia and France who are ranked in the top five in the world. That people are taking stand-up paddleboarding or SUP so seriously should come as no surprise. Last year The Outdoor Foundation released A Wilton Manors resident joins the ranks of competitive paddleboarding a report that estimated that 2.8 million Americans almost 1 percent of the population were active SUP participants--a 30.5 percent increase over a three-year period. For Smart a fitness director at Lauderdale Yacht Club the passion started with an invite from a club member. He was a fit guy he told me that since he started SUP he hadn t been going to the gym that much Smart says. The club member was into competitive paddleboard racing. I got hooked the first time I [did the] racing style. This isn t the slow stroke kind of paddling. Smart offers some additional insights into the sport that has changed his life. WHY HE DOES IT Smart originally from Salt Lake City found that paddleboarding encompassed everything he needed to keep in top shape. It s the best all-around body exercise that you can get. It s a great back and leg workout he says. Smart does 7-mile paddles at least four times a week he logs shorter 3-mile workouts on two other days. WHERE HE DOES IT The water into which Smart drops his paddleboard depends on the kind of workout he wants that day. For smooth fast cardio training he ll careen down the Middle River just 10 feet from his house. For race training it s the Intracoastal Waterway or Port Everglades. Port Everglades is like a washing machine. The water has been bouncing off the sea walls and it s coming from all different directions. TIPS FOR BEGINNERS Start in calm water. New paddleboarders aren t ready for the ocean water that s moving underneath he says. Also do balance training off the board in a gym. It was early February 2010. The owner of The Forge the famous Miami Beach steakhouse was at Paradise Farms in Homestead sourcing items for a new menu the Burn Notice actress was there on the same night celebrating her birthday over a vegan dinner. If Gabrielle had met me at The Forge in that environment she would have had a different depiction of who I was Malnik says. I m certain there would have been some prejudgment. Since I was at an organic farm she probably figured that I was OK. Anwar chimes in I would have never gone to the steakhouse. Malnik completes the round robin And I would have never met her at a yoga class in Coconut Grove where the couple now live. There is a vibrant energy around the two a relationship that puts a capital F in fun an equal partnership that allows each person to maintain his or her own interests. The story of how Malnik captured Anwar s heart is one of those fly-on-the-wall Miami nightlife insider stories complete with food flamenco and intrigue. The way the pair tells it makes it all the more the stuff of storybook romance. After being introduced by a mutual friend while walking into Paradise Farms Malnik says he had to figure out a way to speak with the actress again. He set his sights on approaching her while she was having dinner. I knew if I didn t go over to her at that moment that I would never see her again for the rest of my life he says. Since he had learned that she was celebrating her birthday it was a perfect entry point. That meant she was an Aquarius and I am an Aquarius he says. The restaurateur had created an annual tradition at The Forge--an Aquarius party for those born under the same sign--but he had postponed it that year because The Forge was undergoing renovations. Yet in that moment the party was on again. I told Gabrielle that I was thinking of having the Aquarius party anyway. And she said Great I ll throw the party with you. T Anwar interrupts the story Honey you are forgetting the most exciting part which was that I started to argue with you about who gives the best party. Little did I know that this man was known for being a notorious party thrower. And here I am thinking I ll plan a quick visit to Target --she pronounces it tarjay-- to pick up some votive candles. Malnik says he called his chef immediately to announce that plans should begin for the Aquarius party. We were closed and under construction. The chef was new and he hadn t even cooked at The Forge yet. But I told the staff Do whatever you need to do. Build a tent on the construction site. Malnik did his research. He found out that Anwar who tangoed with Al Pacino in a memorable scene from the 1992 movie Scent of a Woman loved flamenco dancing so he created the theme around it. I did everything in red with Spanish-style food and wine he says. There was one hiccup. Anwar was told she could invite whomever she wanted since the party was to be a joint effort. She called me the day of the party Malnik recalls and said Would you mind if I invited my ex-husband Of course I held the phone away from my mouth and let out (an expletive). Then I got back on the phone and said Of course your ex-husband can come. I figured then whatever happens happens. If worse comes to worse I will have made a great new friend in Gabrielle. Anwar explains the reason for the invitation She and her ex actor John Verea share the same birthday. I was trying to think of Aquarians I could invite she says. But all s well that ends well. In only four days the party materialized. Malnik hired a flamenco dancer-- an older woman who spoke of love he says--and had Anwar s name printed on the menus along with other small touches. But Malnik says it took a little time for his honored guest to realize that the party had been created just for her. At some point I think a light bulb went on he says. She confesses It was when the birthday cake came my way with only my name on it. The cake was red velvet by the way. After that she kind of looked at me a different way Malnik says. 32 AUGUST 2016 LMGFL.COM Wishes Come True Malnik and Anwar support Make-AWish with an annual extravaganza Gabrielle Anwar had her own favorite charities before she met Shareef Malnik but his dedication to Make-A-Wish now has her in a recurring role. One of the gala s traditions has been for Anwar and Malnik to open the night s festivities with a creative and dramatic moment. The 2015 gala with a Greek mythology theme featured the Miami Gay Men s Chorus wearing white and red togas with golden laurel leaves behind their ears singing lyrics written by Anwar. This year s theme is La Nuit de L Animale (The Night of Animals). We re planning plenty of surprises Anwar promises. Make-A-Wish arranges morale-boosting experiences called wishes for children diagnosed with life-threatening medical conditions. Soon after Malnik became chairman of the ball in 2004 his younger brother Jarod--who was 6 at the time--was diagnosed with leukemia. He became eligible for a wish Malnik says. Jarod s was to throw a strike over home plate at Boston s Fenway Park during a Red Sox game. He did it and got a standing ovation. Today Jarod is 18 and cancer-free. I think this happening to my family gave me more empathy for the Wish families and reinforced my commitment to Make-A-Wish says Malnik who since becoming chairman has helped raise the gala s profits from 300 000 to last year s 2.25 million. It s such a positive charity he says. You re making people feel good today as opposed to hoping that the money you give will help someone feel good some day in the future. We re asked what makes us unique--and it s tough to answer in a [sound bite] says Lerman the restaurant s executive chef. We re not the most expensive so we re approachable and casual. It s fine dining but not in the white-tablecloth sense. We re modern American because the flavors of America are from all over the world--but Stephanie is Panamanian so she brings that to the menu. ... We re just different. The same can be said for the young newlyweds (both in their mid-20s) who opened Jardin in late April. But as diners who ve sampled the restaurant s eclectic array of appetizers entr es desserts and craft cocktails can attest it s a good thing in this case that opposites attract. The two met in 2011 at the Culinary Institute of America in Hyde Park New York--Lerman followed the traditional foodie path Cohen specialized in baking pastry. Before long they were more than just an item. She was the fire to his ice he was the calm to her storm. I m the sparks in our relationship Cohen says. Jordan is very soothing so he keeps me [grounded]. None of the girls I had dated to that point had her kind of passion she s passionate about everything she does Lerman says. Dating had been bland. Stephanie is the opposite of bland. It was a recipe that both felt would work as well in a business relationship as in a personal one. After gaining separate experience at renowned restaurants and bakeries in New York the couple relocated to South Florida and took kitchen positions at Rebel House in Boca Raton (he was sous chef she was executive pastry chef). In New York we would come home and talk about all the stuff that went wrong at [our respective jobs] Cohen says. When we started working together at Rebel House things never seemed to go wrong. That was the test to see if we could work with each other. For me I couldn t picture working with anyone else. Or living with anyone else. For better or worse Lerman and Cohen exchanged vows last year and also set in motion the plan that would result in Jardin. In South Florida [culinary] trends tend to lag behind Lerman says. We wanted to bring the traits 46 AUGUST 2016 LMGFL.COM Stephanie Cohen and Jordan Lerman from restaurants we loved in New York--whether it was about the service and decor or the food and style of plating--and turn it on its head here in [Palm Beach County]. On the Jardin menu that means fresh-out-of-the-oven madeleines with basil lemon instead of traditional bread service. Appetizers of crispy cauliflower with maple yogurt cashews and grapes and duck chorip n a spin on the chorizo sandwich that Lerman fell in love with during a trip to Panama to meet Cohen s parents for the first time. It also means entr es such as wahoo bathed in a Mediterranean-spiced puree and pan-roasted chicken with carrot puree and snap peas. The desserts that originate in Cohen s world include a vertical doughnut tower with maple Bavarian cream chocolate glazed and candied bacon offerings--served with honey churros and orange glazed sour cream. There s even a lineup of dessert cocktails (hot chocolate cr me br l e speaks for itself) part of a wildly adventurous drink menu that like the restaurant itself defies simple description. We ve put a lot of thought and detail into each dish--right down to the brigadeiros (South American fudge truffle balls) at the very end of the meal Cohen says. We want that one last bite to be a memorable one. So when Ross did his final tasting with us we gave him some parameters. One of them was to create a dessert that contained gelatin. As you can imagine when he presented his panna cotta dish we instantly fell in love with him. It s a dish (officially dubbed Sesame Panna Cotta on the Kuro menu) that looks more like a galactic landscape than any dessert Sara Lee ever envisioned. Which in the end makes sense. Because when the individual elements come together--crispy seaweed sponge sesame panna cotta pomegranate foam tapioca starch ginger gel e cubes and glistening orbs of cucumber water--the results are out of this world. We wanted to make sure there are no two bites that are exactly alike Becker says but at the same time they all make sense. Pomegranate foam The tartness of the pomegranate is there to break up the consistency of the other flavors. 1. Sesame panna cotta This is a wonderful opportunity to use gelatin in a creamy sophisticated way Becker says. 3. Cucumber water The orbs are created with a technique called spherification we freeze the cucumber water into a sphere mold and then dip it into a bath of calcium lactate which creates a skin that holds the water. The powder is capable of holding oil up to 10 times its weight but when the oil is absorbed it changes the powder s texture. The second it touches the moisture from your mouth the powder melts away. So you re exposed to the salty sesame flavor. 4. Seaweed sponge We take nori seaweed from our sushi rolls incorporate that into a sponge cake and then dehydrate the cake to produce the crispy effect. Sesame and seaweed have been used together for hundreds of years so we knew those flavors would work well.
