Alfred Oglesby was a nose tackle with the Miami Dolphins in 1992. Early in training camp Oglesby no-showed for a morning practice touching off a chain of events that had police conducting an investigation--and teammates fearing the worst. When Oglesby finally appeared early that evening he told reporters that two men had abducted him at gunpoint and forced him to drive 9 miles before setting him free and stealing his car. It took him all night and morning to walk and hitchhike back to the apartment where he was staying. By then the beat writers covering the team--myself included--already had established that Oglesby spent much of the prior evening at a Miami strip club. Beyond that no one was buying that it took a professional athlete the better part of 12 hours to navigate less than 10 miles. The original story quickly fell apart. Oglesby who died in 2009 sheepishly recanted the fabrication he had passed out at a friend s apartment after a night of drinking. Worried about losing his job he concocted the story to avoid head coach Don Shula s wrath. The lie of course only made it worse. Shula revoked stay-at-home privileges and forced the team to live in student housing at St. Thomas University for the remainder of training camp. A week later several of Oglesby s teammates exacted their revenge. They grabbed him in the middle of a payphone call carried the 280-pounder to a nearby oak tree-- and bound him to the trunk using duct tape. That incident occurred during my first few weeks covering the Dolphins for Gannett News Service. Over the next decade as a sportswriter I continued to write about the team for regional and national publications. But as much as I look back on those years with great fondness I d be lying as well if I didn t confess that the fashion stars of our cover story--Miami Dolphins cheerleaders Allison Agustina and Britt--were far easier on the eyes than any sweat-soaked player I ever interviewed after a game. Beverage director James Camp plans to follow his kitchen maestro s lead and create specialty libations that complement the dishes Pera features seasonally. Studying abroad as a graduate student at Columbia University Tygielski raised an Orthodox Jew would find a quiet spot to study her daily prayers. Many of those who attend call themselves the sand tribe. WHY SHE DOES IT Being able to teach other people how to meditate isn t really about the process of clearing my mind but filling my heart. HOW IT S CHANGED HER LIFE Tygielski who had been with Fortune 500 companies for 20 years stepped down in July from her position as president of a security guard company where she oversaw 3 000 employees. I worked up from a cubicle to breaking the glass ceiling in an industry that is mostly male dominated. She plans to travel the country with her creation America Meditates a 90-minute interactive workshop that she says will introduce as many people as possible to meditation and mindfulness. But just how many different ways could the kitchen team at Fork & Balls which opened two years ago on Las Olas Boulevard spin the edible orb best known for its work as a spaghetti topping As chef Bill Bruening can attest the possibilities continue to be endless. The creativity that goes into the different incarnations is the fun of working here says Bruening who served as sous chef at S3 before running the kitchen at Fork & Balls. From the chef s standpoint you realize that wow I can pretty much grind anything when it comes right down to it. The only thing you can t grind is the cardboard box. So that really opened up some different avenues and opportunities. It also presented a challenge or two. Like how would the restaurant accommodate non-carnivores who wanted in on the Fork & Balls experience Along with a veggie ball the F&B team has introduced a quinoa kale offering for its vegan customers--a dish remarkable for more than just its parade of rich flavors. When you re a meatball restaurant and you need a vegan option it forces you to play with different ingredients in different ways says Bruening of the entr e bathed in coconut curry sauce that includes a host of roasted vegetables and other surprises. People are so shocked by this dish they rave about it all the time. Quinoa is great for all those salads you make at home but it always takes on the flavor of whatever you do with it. This dish makes it nice and bright and refreshing. How does Bruening do it He shares a few of his kitchen secrets on the opposite page. 50 SEPTEMBER 2016 LMGFL.COM 1. The binding For both the quinoa kale ball and also our vegetarian ball I needed something to bind it. If you make a ball just out of quinoa and kale it will never stay together. I couldn t use traditional mayonnaise because of the eggs. So I created a tofu mayonnaise--Dijon mustard lemon juice soybean oil tofu. We make it in-house and use that as the binder along with bulgur wheat lentils and other earthy grains. There s also a little bit of pureed eggplant to give it more give it a crispness. 2. Coconut curry sauce There s a little bit of sweetness with the coconut curry broth we use Granny Smith apples to achieve that along with a nice Pinot Grigio. 3. Quinoa It took a good few weeks to get the balance of the quinoa. Too much quinoa and the ball explodes it doesn t hold its form. Not enough and it becomes more of a roasted vegetablestyle ball. ... We had to play with the ingredients but we got it. 5. Veggies The dish includes roasted sweet potato roasted eggplant and roasted red pepper as well as roasted mushroom. If you were just eating quinoa balls in the broth it might leave you wanting a bit more texturally. So adding sweet potato for example gives it that texture. We roast that off with 4.
