I had the opportunity this year to be a judge at Youth of the Year for the Boys & Girls Clubs at the state level. BGC does so much in our community to give children the structure and support they need to be successful. It was an honor to be a judge and something I took very seriously. Mike has extensive experience working with top-level athletes who have gone on to professional careers in their sports. Ward brings 16 years of experience from the University of Miami including 11 seasons as head coach of the men s track and field program and assistant coach with the women s program. The decor is your typical French bistro intimate tables and chairs atop old-school white tile floors. Subway tiles are the backdrop for an array of French artwork and famous comic strips while the full-service bar is an import from a restaurant that once operated along the Seine. I started my evening with a kir royale a classic French aperitif to open the palate. Our waiter Michel was the consummate professional who attended to our every need. The restaurant is known for its mussel pots and for good reason. We sampled the Proven al variation which is made with fresh tomatoes and roasted garlic. The pommes frites were absolutely fresh and the crusty bread was ideal for sopping up the best part of the dish the braising liquid in the bottom of the pot. We also tried the Salade Chevre a mixed green salad with crispy goat cheese roasted beets and candied walnuts. A simple salad has never tasted so fresh and balanced. For entrees we focused on the Sole Meuniere which was presented in a lemon butter sauce with noisette potatoes and French beans. The pistachio-crusted rack of lamb was our second choice and a very good one. Cooked medium-rare it came with a wild mushroom risotto asparagus and veal demi-glace. Continuing our stroll through France a must after our meal was the cheese plate with a jar of foie gras. Everyone was impressed by the quality ingredients on our board. Vive la France PINECRESTMAGAZINE.COM AUGUST 2015 29 GARDENING THE ROYAL POINCIANA BY CRAIG MORELL l bo t Royal poincianas put on a magnificent display of color and grandeur this time of year and 2015 has been a banner year for this and other flowering trees. Poinciana trees make a huge impact on the Miami landscape and there is even a yearly Royal Poinciana Fiesta festival sponsored by the Tropical Flowering Tree Society to celebrate the species. The poinciana sets the standard for glorious color displays. Within the last 20 years there have been even more distinct color variants most notably several shades of yellow orange and amber. The red-orange version that dominates the Miami landscape has variations as well including some rare forms that sport ruby-red flowers. There are other species in the genus Delonix although none have the magnificence of the royal poinciana which the French so aptly name le flamboyant. This species should be planted with respect for its vigorous root system away from pools paved areas and home foundations. It is a tree best appreciated with space around it to show off its spacious canopy and its brilliant mantle of multicolored blooms. If you choose to plant a poinciana select a tree with as straight a trunk as possible. Prune it early in life to foster an upward growth habit and to ensure it grows with enough ground clearance to allow passage underneath. It will still have its trademark spreading canopy later in life. Enjoy this tree properly from a distance including those that others planted decades ago. A 500 000-gallon fish tank. A planetariumsized peek into the human brain. And a whole lot of hammerhead sharks. The new Patricia and Phillip Frost Museum of Science is set to change the face of South Florida s museum scene. The 300 million 250 000-square-foot indoor-outdoor complex adjacent to the P rez Art Museum Miami (PAMM) in Downtown Miami is going up quickly and will feature futuristic exhibits and an eco-friendly standard unlike anywhere else in the world. We have spent a lot of time thinking about how the museum can be a real resource for the community while at the same time how to create exhibitions and programs that make it an international attraction says Gillian Thomas president and CEO of the Patricia and Phillip Frost Museum of Science. An exterior view of the Innovation Center Expansion of the 65-year-old museum became a top priority back in 2001 when it became clear that the institution paled in comparison to newer complexes. In 2004 the city awarded the museum a 165 million bond and plans for one of the most cuttingedge science centers in the country were officially underway. Designers of every kind were selected to ensure the museum would boast the finest contemporary architecture numerous avant-garde aquariums progressive exhibits (like an interactive hologram of the human body) and renewable energy resources. The team drew from inspiration around the world. The City of Science and Industry in Paris has in fact been my career s inspiration Thomas says. It has a unique combination of attention to high-quality design new science and the latest technology and it merges those elements with its 36 AUGUST 2015 PINECRESTMAGAZINE.COM social programs. She says they also want to mirror the Monterey Bay Aquarium for its commitment to conservation and the environment. In 2012 the new museum finally broke ground on the futuristic awe-inspiring center. Construction crews worked nonstop for more than 24 hours to produce one of the most significant achievements in architectural design pouring 1 200 cubic yards of concrete into a cone-shaped vessel to create the 500 000-gallon Gulf Stream Tank (to view the sharks tuna and hundreds of other creatures from above or below). While the museum s design is impressive in scope and concept the five-story complex will have a walkable quality that will allow patrons to experience everything in one visit. The project s most eye-catching (and talked about) element is the unprecedented Living Core Aquarium a multilevel demonstration of Florida s ecosystem. The exhibit will include PINECRESTMAGAZINE.COM AUGUST 2015 37 Renderings of Museum Park (above) and the Baptist Health People & Science Gallery (right) a rooftop vista where visitors can observe the Gulf Stream Tank as they are surrounded by an urban garden. From there onlookers descend through the various levels including The Dive (filled with florescent anemones and touch aquariums) and The Deep (featuring an 80-foot interactive media wall that will bring museumgoers eye-to-eye with giant sunfish and humpback whales). The pi ce de r sistance though will certainly be the 30-foot tilted oculus window which will reveal the culmination of the aquarium (including hammerhead sharks) as seen from below. One of the current museum s most popular exhibits the planetarium will be taken to an entirely different level in the new space. The planetoidsized dome which can be seen from I-395 at Biscayne Boulevard will feature 250 seats 8 000 projectors a 23.5 percent screen tilt that matches the Earth s angle of inclination and a 16-million-color laser-projection system (yup the famed Pink Floyd laser light show will be getting a major upgrade). Exhibits will include multimedia experiences such as star shows journeys in space and explorations of the human body. Further electrifying exhibits include Feathers to the Stars a display of flight from prehistoric Earth to modern-day aircraft the River of Grass a model of Florida s Everglades designed specifically for children that features a digital animal wall a virtual river and a water play area the Knight Learning Center a high-tech set of classrooms for hosting school tours and group activities which include the NASA-funded Virtual Missions and Exoplanets (vMAX) education program the four-story Innovation Center which highlights new and emerging products and offers opportunities to meet inventors in residence and 25 000 square feet of space allocated to the Historical Museum of South Florida. One of the most important highlights of the new Frost Museum is its commitment to renewable energy. The building will be LEED Gold certified and will explore sustainability through a variety of avenues including solar panels the living Green Roof (which grows food for the building and beyond) modernized clean water management and the buildingwide Energy Trail and famed dance floor both of which directly create energy for the building itself. The old science museum closes its doors at the end of August and the new location is expected to open in summer 2016. Susie Bond a Miami native has fond memories of visiting the old museum as a child and can t wait to introduce her two children to the new location. Where should you eat What should you order We did the work for you now all you have to do is read and dine FEATURE NEW TO MIAMI SPICE QUALITY MEATS This New York steakhouse was one of the most anticipated openings in Miami this year and it s our top Spice pick for carnivores. The steaks are truly top-notch and thankfully they are the main event on the generous Spice menu (many steakhouses don t offer steak on their discounted menus). Look forward to prized appetizers such as dry-aged meatballs and sea scallops but be sure to save room for entrees such as center-cut filet grilled bavette steak and honey-glazed baby back ribs. Forget Meatless Monday this steak-centric Spice dinner menu is offered every night of the week. Score Cleo s roasted Brussels hearts with hazelnuts BAGATELLE With existing locations in New York and St. Barts Bagatelle s new Miami Beach location has quickly become a scene stealer. Its Spice menu is only available for dinner but unlike many high-end hot spots it s offered on Friday and Saturday evenings when the restaurant is bumping. With five appetizers from which to choose we suggest diving into the market oysters (three pieces) served with a Champagne mignonette sauce or the octopus carpaccio. Next move on to a delicious arctic char or the juicy Le Parisian burger before finishing with the jasmine creme brulee with honey ice cream. KLIMA Breathtaking Klima has been one of the most buzzed about openings in recent months. Miami Spice is a great time to get introduced to this posh indoor-outdoor restaurant that s inspired by contemporary gastronomy from Barcelona. The Spice menu is small but solid. The appetizer course is a fresh and creative fennel carpaccio with burrata and Kalamata olives the main is a veal-stuffed paccheri (pasta) or a black cod and dessert is a passion fruit coco and mint slush. CLEO Cleo is hands down one of our favorite restaurants in South Beach. Miami Spice is simply another excuse to delve into its delectable Mediterranean food. Start with a dip (we suggest the ridiculously creamy baba ghanoush) followed by the restaurant s famous roasted Brussels hearts the meatball tagine or the grilled Dourade. For dessert finish with some sweet and sticky baklava. COYA Brickell s new Peruvian outpost from the owners of Zuma offers gorgeous design and outrageous Latin American food. Open with the Pescado Local Clasico (fresh fish with red onions sweet potato and white corn) or the Calamaris Fritos con Ocopa served with quinoa and a flash of jalapeno followed by the Filete de Branzino (sea bass served with fennel salad) and finish off with the Sundae de Maiz the over-the-top sundae made with sweet corn ice cream and served with salty-sweet caramel popcorn. Be sure to have a pisco punch at the vibrant bar. The bright pisco bar at Coya Peruvian Chocolate Mousse at La Mar Pascal s twice-baked cheese souffle BEST BANG FOR YOUR BUCK LA MAR BY GAST N ACURIO Any excuse to dine at the dazzling Mandarin Oriental is good by us and this Peruvian Miami Spice menu is an excellent reason. The Criollo appetizer sampler with calamari cebiche and a causa salad is a good way to sample three different items while the main course Tallarines Verdes (pesto noodles with beef Milanese and egg) is a unique signature dish. Polish it off with the crunchy Peruvian chocolate mousse topped with caramelized quinoa so different and so delicious power lunch the way Il Mulino does. Go all out with the ricotta meatball starter (or the amazing mussels) then choose from one of five entrees like the salmon with porcini mushrooms or the orecchiette with sausage. And you must try the homemade Italian cheesecake. PASCAL ON PONCE S A Coral Gables favorite Pascal s is an unpretentious go-to spot for any and all Francophiles. The lunch Spice menu is a particularly fun way to say bonjour in the middle of the day. The twice-baked upside-down cheese souffle is the way to start (and worth the additional 8) and you can lighten up with the perfectly done Mediterranean salade nicoise for an entree. If you ve never had French Melba for dessert start now. IL MULINO Many Miami Spice menus include a lunch offering but few pack a perfect HAKKASAN Our favorite part of Spice is spending a Saturday or Sunday afternoon at this decadent (and pricey) Asian restaurant indulging in its dim sum platter which features Chinese chive shrimp dumplings and other steamed delicacies. You also get an entree and dessert (like coconut panna cotta) to complete a filling meal at 23 a person. For dinner you simply cannot leave without trying a fried rice or noodle dish. Our June issue featured drivable weekend getaways while in July we provided 12 awesome tips for experiencing North Carolina like a native. August finds us staying in Miami getting that last bit of vacay before the fall starts in earnest. Sometimes the best vacations are the ones in your own backyard. We took the opportunity to experience Miami and came away with a new appreciation for the 305. On a Friday afternoon we checked in the Vintro Hotel & Kitchen in the Collins Park area of South Beach. This used to be the old Park Avenue Hotel in the 1930s and art deco touches are everywhere. It is located just 15 minutes from the airport and right in the middle of the cultural arts district its neighbors include the Bass Museum of Art the Miami City Ballet and the New World Symphony. Logistics alone make this a winner for a cultural weekend on the beach. The 50-room boutique hotel is charming with a very attentive staff. We enjoyed drinks in the very comfortable lobby bar (which is exactly the right mixture of cutting-edge combined with sophisticated comfort). Striking artwork adorns the walls some of which are available for purchase in the pop-up art store. After a few drinks we adjourned to the kitchen to sample the outstanding Mediterranean cuisine. Must-try menu items include the grilled octopus starter and the very interesting goat cheese croquettes with prosciutto. Entrees we enjoyed included the daily fish special an interesting corvina and elegant lamb chops served with an herb farrotto. The farro was an amazing accompaniment to the perfectly prepared lamb. We finished off our meal with chocolate mousse with a touch of sea salt and olive oil. Once we finished dinner we got in the elevator (the interior of the elevator is a treat in itself with its own art installation purchased from Art Basel) and headed to the rooftop for a late-night drink and to view the city. Vintro has a sexy old-school vibe with lots of amenities. Although it is not located on the beach it does have Mercedes-Benz shuttles at the ready to take you there with a beach chair set up. There s also a complimentary bus shuttle that is on call that runs from the southernmost tip of South Beach to the Fontainebleau. That s a lot of real estate you can cover and never move your car. There are also complimentary bicycle rentals and pets up to 25 pounds are welcomed. We checked out in the morning and checked into the McAllister Spa a full-service spa on Alton Road with all the bells and whistles including a Style Lab blowout bar. What staycation is complete without a little pampering I was put in the able hands of Laura Bernal a master colorist for Goldwell. She assessed my situation made some suggestions and got to work. I walked out with natural beautiful tresses complete with the new Olaplex treatment. We left South Beach and headed downtown to check into the YVE Hotel right across from Bayfront Park. Staying downtown is fun and exciting and will change how you think of downtown forever. There is so much to do. Hop on an Uber to Wynwood for a bite at Wynwood Kitchen & Bar and a tour of the Wynwood Walls. It s a great place to stay if you are going to a concert or Heat game at the Triple A and you want to have a luxurious night out. Yes you can walk to AAA from the hotel. The view from our well-appointed room was spectacular. We were looking out over Biscayne Bay with condos on our right and left. Miami s downtown is starting to feel very urbane in a good way. We enjoyed outstanding food downstairs at Biscayne Tavern. The Shrimp Dynamite appetizer was a meal in itself and absolutely delicious. Spicy and served with a Thai chili mayo it can t be beat. Our favorite entree was the Churrasco Steak served with chimichurri. Chef Guillaume Joseph prepared everything skillfully and we were impressed by the attention to detail by both the wait staff and the restaurant manager in the hotel. You know you are in good hands at Biscayne Tavern. I didn t close my room curtains for a long time at the YVE soaking in the downtown ambience. As a longtime Miamian it s good to see the revitalization that is happening there and I m proud that our downtown core is changing into something special. As we checked out the next morning refreshed by our weekend away we drove 15 minutes home. Now that s a vacation. One of the fi rst things I encountered was a 158 million budget hole that had to be resolved in a matter of weeks. There was unrest among the district s workforce and our school board was not unified in the singular task of increasing student achievement. So my position was very much like the legendary Dutch boy s plugging holes in the dike to hold back the tide of troubles we were facing. Seven years later MiamiDade has become a leader in educational technology with student achievement exceeding that of other school districts in the nation. The scope of my work has expanded to where I am able to serve in an advisory capacity at the state and national levels helping to ease the difficult transitions to national education standards and standardized assessments. 3 What do you like best about your role as superintendent Being superintendent has helped me meet and tap into many of the fascinating successful individuals who call Miami home. So many top-level people are willing to give their time and talent. Bankers real estate geniuses sports fi gures actors musicians and artists who realize that they have something valuable to share with young people all have become involved in our schools I love to speak with them to discover the part they can play. How did your previous positions with M-DCPS prepare you to run the school district As public information officer I learned the benefit of working with the media in getting our message out to the public. My time in grants administration helped me learn where the money comes from how it can be spent and how to beat the bushes for more when it s necessary. But ultimately it was my time as a classroom teacher that gave me the biggest chunk of support for my future. It helped me understand the basics of education and what is needed to help light a spark in students so that they can achieve. 4 questions with Carvalho Alberto M.
