Julia Black Andrews was all of the above driving south to find inspiration--and possibly a guest curator or artist--for a future exhibition at the Coral Springs Museum of Art. The museum which turns 20 this month operates on the theory that art is everywhere says Andrews the executive director. It shouldn t be intimidating nor isolated to a big city. Every three months the museum changes its exhibits to expose South Floridians to new art and local national and international artists. Until Feb. 28 the main gallery s white walls will be decorated with 50 large canvases splashed and stroked with vibrant colors the work of Miami artist J. Steven Manolis. Andrews curated the exhibit that will hang in the back gallery until Jan. 28. The collection of painted canvases called Fifty is a tribute to the United States by Coral Springs resident and Venezuelan native Isabel Perez. On Jan. 6 the east gallery will display the work of local Advanced Placement high school students as chosen by the Broward County Public Schools superintendent. From Jan. It is attached to the Coral Springs Center for the Performing Arts and was originally a gym but it disaffiliated early from both the center and the city. Hormel who founded what eventually became Hormel Foods. Tom s father Jay C. Hormel is credited with the inventive thinking that made Hormel a household name especially for Spam luncheon meat which Jay introduced in 1937. Tom 87 preferred creating music and art instead of working in the family food business. When he was 14 he composed his first song Blue September a jazzy ballad a la Rodgers and Hart s Blue Moon and copyrighted it in 1949. When Tom was in his 50s older brother Geordie took the liberty of recording the song. Sun Valley California was where Hormel composed Legend of Bird Mountain a 23-minute composition for a full orchestra that will be performed by the South Florida Symphony Orchestra as part of its 2016-17 Masterworks Concert Series. Symphony music director Sebrina Maria Alfonso will conduct the world premiere of the piece that Hormel originally wrote as part of a contest sponsored by the Sun Valley Summer Arts Festival in 1990. BY KEVIN KAMINSKI LMGFL.COM JANUARY 2017 53 D espite the daylong drizzle that had turned its famed dirt track to mud Pimlico Race Course just outside of Baltimore was abuzz last May 21. A record crowd of more than 135 000 awaited the 141st running of the Preakness Stakes the second leg in thoroughbred racing s annual Triple Crown. Appropriately enough the honor that day of announcing Riders up --the ceremonial command for jockeys to mount their horses--had fallen to Belinda Stronach the whipsmart businesswoman who may be the sport s best bet to re-imagine its potential. It s a wager that s shared by more than just horse racing s hierarchy. In the minutes before post time at the Preakness a young employee in a yellow raincoat approached the chairman and president of The Stronach Group whose portfolio of legendary racing and gaming entities includes Pimlico Santa Anita Park in Southern California and Gulfstream Park in Hallandale Beach. He thanked her for taking such an interest in the sport. It proves he told her that someone cares about the industry and about our future. For me that was so meaningful says the 50-year-old daughter of Canadian billionaire Frank Stronach who founded the global automotive parts company Magna International. This is truly a stakeholder industry it means something to the owners the jockeys the trainers the track employees. We re the largest owner and operator of race tracks in North America and so many people depend on us for their livelihood. It s really up to us to modernize this sport. And I totally believe that we can do it. The industry is declining as a whole and there is consolidation says the part-time Sunny Isles Beach resident. The sport has failed to create a reason for people to want to come back to the track and it hasn t invested enough in technology to keep the younger generation engaged. But [The Stronach Group] is growing within a declining industry. What we re doing is looking at this not just as a racing and gaming company but as an entertainment company first and foremost. We re competing for time and attention with football baseball and other live events. We have to create and curate that compelling customer experience--and horse racing and wagering can be at the core of it. ... Right now the Triple Crown includes marquee races and then there s the Breeders Cup. But there isn t much awareness beyond those events for the general public. So we re creating new products. A science experiment has taken an unexpected turn--and now you re locked inside a laboratory. Worse still the lights are out. What happens next is up to you. No this isn t a scene from a PlayStation virtual reality game. It s a storyline from a live-action escape room the popular form of entertainment that literally leaves a team of people in the dark. Participants have an allotted amount of time to find clues and solve puzzles that enable them to escape the room and ultimately win the game. Greg Kormendi owner of QQuest in Pompano Beach and Think Escape Games in Fort Lauderdale is one of the first to bring the dark-room adventures to South Florida. Born in Hungary where escape games are widely popular Kormendi and his father thought it was time to bring the adventure across the Atlantic. You see them a lot around Europe he says. I didn t know what the reaction would be here but because I like to build different things I thought I would try it. Though many of Kormendi s storylines are eerie he describes the activity as lighthearted. It s meant to foster a team-building experience with groups of friends family or both. The idea is to get into a room and work together to successfully get out in less than 60 minutes he says. It makes a team come together or fall apart. Either way it puts them to the test. Kormendi s stories are all one of a kind. Though some draw influence from mainstream movies each one has a distinct narrative. I try to come up with a basic script and theme for a game he explains. Then it s about organization and letting my imagination run. Sometimes we think of things that can t be possible but then you envision it from a different angle to find a way to make it happen. Regardless of the story players are usually tasked with challenges such as finding objects hidden around the room. Each object found gives players a clue to the next object needed. Some might be hidden under a block in the floor and others might be attached to a chair in the room. But the key to every game Kormendi says is its need for a paradigm shift. People usually look at it so convinced that it s one way he says. But then that light bulb goes off. They realize it s actually totally different than they thought and that s what expands their mind. None of the games require physical labor. Participants interact with various objects using their minds to fill in the gaps. For example there might be an X-ray machine he explains. The only way to see the screen behind it is to put on special glasses. When you first look at the machine all you see is that. But once you have the glasses on you see the message on the screen that gets you one step further. Kormendi says that some first-timers are successful but many are not. The point of the game isn t to make it out in time he says. The point is to go through it and experience it. Even if they don t make the time limit we let them stay in there to finish but help guide them through. Escape game rooms have been around since the early 2000s but they recently made their way to the States. Now there s close to 1 400 escape rooms housed in 277 cities and 53 countries. As popularity continues to rise Kormendi believes it s just the beginning. It taps into a human curiosity that we all have he says. It makes you see the world a little differently. You have your two hands your mind and the other people around you. Now you have to make something happen. This year he ll serve as president of Greater Fort Lauderdale Realtors so who better to ask about the real estate market for 2017--especially with the arrival of a new U.S. president who began his career in real estate Is the interest in new construction or existing homes New construction that has a contemporary or coastal style is very desirable right now and these are the homes that are selling the fastest. Buyers in the ultraluxury sector want a turn-key situation however. Homes that are staged where the buyer can walk in and see how everything lays out is the trend. International buyers like the expansive lots and gated communities like you ll find in Weston and out west. They are used to big lots the homes are newer and they are on a lot of land. Do Fort Lauderdale and its surrounding cities continue to be desirable places when it comes to buying real estate Yes we are a good investment and will continue to be. International buying has slowed because of the strong U.S. dollar so we re not seeing as many international buyers come in. The hottest market right now [is] locals moving around. These are couples who have two incomes and they are wanting to buy homes. We re seeing an increase in that market. Do you think the presidential election will have any impact on sales in the Fort Lauderdale area We re hoping with President-elect Donald Trump being very pro housing and construction that we will see an increase in the amount of sales in ultra-luxury homes. The market definitely slowed pre-election. When interested buyers come to Fort Lauderdale from outside of the area what is it they are attracted to People come here for the yachting and the marine service areas. We have the Fort Lauderdale International Boat Show and Yacht Show. We re close to Miami and Palm Beach and we have great airports. The ultraluxury buyer whom I ve worked with for the past several years likes to invest money here because it s a safe investment. Our taxes are lower too. I have buyers from California coming here because of the lower taxes. What is the biggest trend you are seeing and what trend do you think will continue What we re finding is that people are downsizing and moving to places where they can enjoy their life. I have one couple who has a 10 000-square-foot house and 150 feet of deep water and they want to downsize into a condo. I have a client with 245 feet of waterfront and an 8 000-square-foot house and they want something that is less work. They want something smaller that they can spend time enjoying. These are people who have raised children in these larger homes and now want a luxury lifestyle on the ocean in a new building. Sales are brisk at condominium communities like Auberge and Paramount because people are moving out of the homes out west and want something on the beach. We ll continue to see this trend of locals moving around. We ll always see the international buyer coming here too. I just finished with a buyer from Sweden who closed on a property in 10 days. SOLOMON Caption Two savvy industry veterans create nisi an authentic ethnic dining experience in Fort Lauderdale When Andy Tsavos was 10 years old his father a restaurateur of Greek heritage moved the family 5 000 miles across the Atlantic Ocean from Royal Oak Michigan to Patras Greece. For the first few years my father took time off work to travel and introduce us to Greece and our heritage Tsavos recalls. It changed his view of the world and of food. When you grow up in a place like that all the memories are there the flavors the smells he adds. You know what real food is supposed to taste like. That s what influences the menu at Nisi the casually sophisticated Mediterranean restaurant specializing in Greek food that co-owners Tsavos and chef Joshua Wahler debuted in September. It s housed in the former Thasos Greek Taverna in Fort Lauderdale the vision of Gus Leontarakis and Sophia Mylona who transformed what was once a Denny s into an elegant restaurant in 2012. Leontarakis and Mylona tapped Greek interior designer Angelos Angelopoulos known for his spectacular hotel interiors to create spaces both inside and outside that were influenced by the ocean. We didn t want to take too much of that away says Tsavos who adds that he and Wahler made minor changes including adding an experience display a raw bar of sorts that showcases the day s fresh fish. We encourage guests to get up from the table and look Tsavos says. You ve heard of farm to table we re sea to table. Oysters snow crab anchovies sardines. When people go out for dinner they want to be entertained so this is part of it. Tsavos and Wahler know the kind of presentation they want to achieve. As much about the experience as the food the two are pros in the hospitality industry. While Wahler was competing on Season 3 of Fox s reality TV food show Hell s Kitchen in 2007 Tsavos was working as a regional director of operations for Nikki Beach Hotels and Resort. Seven years later the two met at Estiatorio Milos in South Beach. Wahler was executive chef Tsavos was general manager. They wanted to be partners in business but both swore that it would not involve a restaurant. They launched Born Foody a meal subscription service which delivers healthy foods for kids. But then the owners of Thasos came calling. We knew that Gus wanted to pass it on to someone and he didn t want to give it to anyone Tsavos says. It was hard to say no to the opportunity. To taste the menu at Nisi (which means island in Greek) is a chance to savor some traditional Greek foods with Wahler s inventive spins--fresh sardines atop madefrom-scratch crostini fried zucchini chips with yogurt tzatziki sauce for dipping which Tsavos calls the Greek ketchup because Greeks serve it with everything. Homemade dipping spreads which can be ordered separately or as piatela (a platter of all six) include spicy whipped feta grill-roasted eggplant (which gives the spread a smoky flavor) organic green chick pea the in-house tzatziki and taramasalata a fish roe spread. Nisi s grilled octopus is another must served with bean puree on the side as is a customer favorite feta sticks wrapped in dough and drizzled with honey and sesame seeds. The generous menu has more than enough choices. Entr es feature a daily catch yet sea bass is always an option. The chef also recommends guests order fish with a saltcrust supplement. The whole fish is encased in a salt shell which is carefully removed tableside. The baking method allows salt to seal in moisture and the flavor of the fish. For dessert of course there s the requisite baklava plus galaktoboureko which is custard wrapped in phyllo dough and the wildly popular loukoumades which is fried dough soaked in syrup and topped with chopped walnuts. Mediterranean mixology is also part of the Nisi experience. The made-to-order Chios Mist cocktail contains FOS Mastiha made from the resin of the mastic tree found on the Greek island of Chios. Just another touch at Nisi to show that everything on the menu from start to finish is authentic. It s less than two weeks until the renowned Miamibased business takes up the ultimate catering gauntlet--producing five-star feasts at more than 60 events during Art Basel week in early December. Yet the company s Belgium-born executive chef the aptly named Vincent Gourmet appears as cool as the liquid nitrogen that he s been known to incorporate into certain recipes. In the end he explains it boils down to simple math. We can do events for as many as 1 200 people says Gourmet who had his own award-winning restaurant in Marbella Spain before joining Isambert in 2012. We ll have three chefs per line with a max number of 150 guests per line. But whether it s 100 people or a thousand the timing is the same. We have between 15 and 20 minutes to serve everyone in the room. As impressive as the sheer volume of plates can be it s hardly the catering team s only measure of success. Borrowing a cue from the company s namesake (Isambert has been honored twice since 2009 with the M rite Agricole medal by the Ministry of France for his culinary excellence business integrity and charitable work) Gourmet consistently looks beyond the limitations of cooking for large groups at celebrations nonprofit galas and corporate events--and instead sees only possibilities. Look no further than the dish he created just for Lifestyle--one he notes that could easily end up as a menu option for clients. The plating of Mishima Ranch wagyu beef with truffle wafu glaze microgreens and stone potatoes exemplifies the artistry and the trademark surprises that Gourmet enjoys bringing to the table. What you see isn t always what you experience he says. Our goal is always to make the impossible possible--on the largest stages. 72 JANUARY 2017 LMGFL.COM 1. Top it off The truffle wafu glaze was originally a straight vinaigrette but two years ago we tried to re-create the sauce specifically for beef. Truffle wafu is a typically Japanese vinaigrette the acidity of the soy sauce the sweetness and the truffle flavor [work together to] provide a nice kick with the beef. 2. Only the best In America Mishima Ranch wagyu is probably the best brand of beef beyond the authentic Japanese wagyu. Most of the cattle are [raised] in California we have a Fort Lauderdale-based supplier for our stock (Halperns). This cut is a traditional rib-eye it s a simple beef to cook. The best way is on the grill and then a flash in the oven. 3. Turn to stone A chemical process incorporating lactose and agalita is used to coat the small potatoes featured. When the coating dries the outer shell resembles a river stone. It really has no flavor Vincent says but it gives the potato a crunch like a candy coating on an almond. 4. Seeing isn t always believing Vincent brings a trompe l oeil aesthetic to other dishes served by the Isambert team but he s especially fond of the stone potatoes. Diners wonder if there are rocks on their plate--which is the exact result we re looking for he says. People think twice before taking the first bite. You ll see guests waiting for the person next to them to try it first. I like that. We love to surprise the diner with a little wow effect. 5. Going green We work with a company in Ohio that specializes in edible flowers and microgreens. Anytime they have something new I ll try to add a little piece. The thinly sliced purple ninja radish gives us color on the plate and acidity and some heat to the taste which works with the sweetness of the rutabaga. We keep it on ice to maintain the crispness. We also have carrot tops for the flavor--and pea tendrils which we just like for the crazy look.
