Editing copy conducting interviews writing stories reviewing layouts assigning photography discussing company issues with the management team-- as a former magazine editor herself she understands these day-to-day duties are par for the publishing course. Other days--especially it seems when fashion is involved like it was for this month s cover shoot--nothing about your honest and accurate account of what transpired comes out sounding right. I spent the morning and afternoon in Miami with model Claudia Sampedro. We dressed her in spring styles--but she s known for her swimsuit work. Did I mention that she has 1 million followers on Instagram We photographed her with animals. Do you want to see me and Claudia with a 10-foot albino Burmese python Fortunately my wife is secure enough in our life insurance policy not to care about the python. As for Claudia I m sure Jennifer was more concerned that I would embarrass myself in front of the Miami native s boyfriend future pro football Hall of Famer Julius Peppers--who joined us for the end of the fashion shoot at Jungle Island in Miami. Peppers and I had some history I had written about him for a national sports publication way back in 2000 when he was an All-American defensive lineman at North Carolina. But that was 17 years and 143.5 NFL sacks ago (for Peppers that is not me). He smiled politely at my recollection but like everyone else that day his eyes were on Claudia. And who could blame him The couple have a young son together Amare but the Cuban-born social media sensation looks like she just stepped off the stage at a Ms. Fitness USA competition. Claudia hopes that her Instagram page TV appearances website and line of active wear can be a source of empowerment for women. We d like to think that the photos we staged at Jungle Island will add to that platform. However we re guessing that our male readers will be inspired as well. Enjoy the April issue. The national awards program honors young people for volunteer efforts. Florida had two top youth volunteers as well as eight distinguished finalists. Lam was honored for her part in organizing Foster Hope Foster Thanks a drive that provides groceries during Thanksgiving to about 65 low-income families from the Miami-Dade Foster and Adoptive Parents Association. She was inspired by an adopted friend to help these families and has also spearheaded drives collecting cookies and toys for these families. That s the goal of Lauren Koff and Cristina Rodriguez graduates of the Honors College at Florida Atlantic University--and the brains behind Mind&Melody. The nonprofit organization uses music to improve the lives of people suffering memory loss from strokes dementia and Alzheimer s and Parkinson s diseases. The program which launched in 2014 now has five chapters across Florida and about 100 active volunteers. There s no cure for memory loss but studies have shown that stimulating activities help to slow its progression Koff says. Mind&Melody has been endorsed for having the four key components that can accomplish this social cognitive creative W and physical stimulation. In one-hour interactive sessions a team of high school and college students and the occasional professional musician visit participating health facilities. They use a rhythm-matching game to teach patients who are usually 65 and older the basics of music theory. Throughout volunteers play various instruments such as the piano cello and violin. After a few sessions the patients learn how to play the instruments. The team breaks out color-coded keyboards and sheet music to help them learn simple songs such as Mary Had a Little Lamb and Row Row Row Your Boat. Sometimes the simple melodies spark the memories of patients with prior music experience. With some coaxing they begin to play on their own. A man who stopped playing the piano because of his dementia was encouraged to sit at one in his facility. He started playing Moonlight Sonata --the more he played the more he remembered. His wife teared up behind him. That was the first session I got emotional says Koff 24. I had to turn around and tell myself to get it together. Many Mind&Melody sessions begin in the late afternoon a sundowning period when many patients can become agitated. For some presidents they ll send someone to watch your preparation she says. Also there cannot be a specific plate prepared just for the president. Your entire working staff needs to be preapproved and there s a zero tolerance for cellphones. She learned that a member of royalty attending a party that she was catering had an allergy to MSG. As a mother of two with a full-time job in downtown Miami Ortiz and her husband were often pressed with what to whip up each night for dinner. We d always find each other asking the same thing What s for dinner she says. There was this constant shuffle of feeding the family and putting something different on the table every night. I felt like I was failing on that part. Time aside Ortiz loves to cook. My mom is from Europe and I grew up with her cooking everything from scratch she says. My brother works as a professional chef now too. I know how to cook but I just didn t have the time. In 2005 Ortiz discovered Dream Dinners a fix-and-freeze meal service store. Created by working mothers Stephanie Allen and Tina Kuna in Snohomish Washington the company caters to busy families hungry for opportunities to spend time together over a meal. Ortiz knew this would be perfect for her family but there were no locations in Florida. I knew nothing about opening or running a business Ortiz says with a laugh. But I decided to hit the ground running because I was so in love with the idea. Ortiz who previously worked as a therapist for HIV patients left her job in the medical field to open her own Dream Dinners in Pinecrest. Though she had no experience in business management Ortiz was able to open in less than a year handling everything from the store s construction to finances and marketing. Since debuting in 2006 Ortiz serves upward of 250 families each month. I help families make healthy homemade meals she says. It s something I needed and I know a lot of other families needed it too. Ortiz and her team supply each family with a month s worth of raw ingredients which are washed chopped and prepared along with an assortment of sauces and other additional toppings. When they go home the whole meal is in the bag she says. The only thing that s left is to put it together and throw it into the oven. We cut out all of the shopping cutting and thinking. The families just get to do the fun part. Every meal is paired with its nutritional information too helping customers make smarter choices when it comes to eating. Though Dream Dinners isn t designed as a weight-loss service Ortiz explains that many customers end up shedding extra pounds. I personally weigh about 25 pounds less she says. It makes a difference because instead of picking up fast food you re eating something completely fresh and preservative-free. It also helps to teach kids how to eat a satisfying meal without feeling deprived. Ortiz talks with every new customer to discuss expectations. For those concerned with dietary restrictions for example Ortiz can customize menus. Besides supplying meals Ortiz wants to help families connect. We want to help families have more moments together she says. Sometimes it s hard and many of us feel overwhelmed and that we re not doing a good enough job for our family. According to Azar before each cake goes into the oven the kitchen fills it with pieces of its toppings. In the Kit Kat Grand Gateau we put pieces of Kit Kat [candy bars] inside the cake before it s baked. It was inspired by one of my good friends who makes artisan ice cream bars in Brazil he explains. Eight years ago he asked me if there could be good dessert made with an ice cream bar. I then went into the kitchen to think about it and ended up with the first Grand Gateau. From strawberries and tiramisu to Kit Kats and dulce de leche Azar s Brazilian locations feature more than 40 different Grand Gateaus. For now Miami offers six with plans for more. Paris 6 in Brazil open 24 hours is a staple for artists and theatergoers to dine after a show. Azar hopes its Miami location will grow into something similar. The intense light and dryness of our winter and spring seasons evoke the summer climate of lands surrounding the Mediterranean Sea with the accompanying fantasy of enjoying good food good wine and lazing in historic landscapes. Geographic areas that share the climate of the Mediterranean Basin are few coastal California part of coastal Chile the southwestern coast of South Africa near Capetown and southwestern Australia near Perth. These places have climates characterized by warm dry summers and mild winters with modest rainfall. When it doesn t rain humidity tends to be fairly low. These areas have distinctive local plants that have been used in gardens worldwide. Mediterranean gardens are characterized by the following Shelter from the sun and wind and a sense of enclosure. Plants and structures such as walls and courtyards enhance the time spent in the garden. Use of local materials. In South Florida local limestone for hardscaping is a possibility. Silver olive green and bluish-leaved plants as an important part of the plant palette. Fragrant herbs and flowers enriching the garden experience. Precious water especially the sounds of it splashing into tiled fountains and pools. That s a beloved part of a Mediterranean theme. South Florida s climate is different from the world s Mediterranean regions dry and warm in winter extremely wet in summer and with days that have fairly high to extreme humidity. Most Mediterraneanclimate plants won t grow in the southeastern United States but some are spectacularly adaptable. Where true Mediterranean plants would struggle substitutes can be used to provide the same effect. Here is a brief list of good basic plants to try Our native Southern live oak with its twisty branches and dark leaves is a good substitute for the famous cork oak. Although date palms are widely planted they struggle in our summer wetness and extreme humidity. Use Silvester date (Phoenix silvestris) if a large palm is needed otherwise try to find the beautiful Cliff Date (Phoenix rupicola). European fan palm (Chamaerops humilis) is a Mediterranean native that can be used in our gardens. The shrubby silver form is popular but doesn t reach its full potential in rainy South Florida. The typical green form is a classic Mediterranean garden plant that makes for a much nicer specimen. Oleander is one of the best-known Mediterranean flowering shrubs or trees that thrives in South Florida. The strikingly shaped Hollywood juniper (Juniperus chinensis or Torulosa) is one of the few nontropical evergreens that will do well here. Bougainvillea although not from a Mediterranean climate long has been used in traditional gardens. Although citrus varieties have been set back by diseases and pests lately their fragrant blossoms and fruit are important components of the Mediterranean garden style. Try the tough-as-nails Key lime or petite calamondin. Either can be kept in a large pot or tub. For accent plants try using intensely blue-leaved agaves or the dramatic forms of dry-growing cycads such as Dioon edule and the striking Encephalartos horridus. Seasonal pots or herbs such as rosemary and finer-leaved forms of basil and oregano can complete the setting. One is the scope. At Harvard I was dean of the school of public health and public health is my specialty. ... It was a focused approach. Here it is the entire scope of scientific and artistic endeavors and so the scope is comprehensive. That s been a great opportunity for me to learn. ... Also as president I m CEO of the organization. Although I am accountable to a board I don t have an individual to report to. I m appointed by a group called the board of trustees which has a chair but in the end as president it s given me a clear meaning of the famous phrase the buck stops here. What do you learn from UM students The most exciting part of my job is the interaction with students and young faculty members. It s an incredible privilege to go to work everyday interacting with these bright people. Newer generations have a different perspective. They have a worldview that s different from that of prior generations so I like to sit down and listen to them. One thing I ve found at UM is that the students are engaged--they re active. ... They re independent. They have strong ideas and proposals. But they always express themselves not only with great respect but also in a constructive atmosphere. I can sense the love that our students have for the university and that s invigorating for me. 2 Mexico and completed his career and my father is a physician. In the prior three generations they were all men. In my generation my sister [also] is a physician. In the next generation [of physicians] all three--my two nieces and my daughter--are women. It tells you that medicine is on the path of improvement from being almost an all-male profession to a much more diverse profession. 5 3 What lesson has defined your presidency so far Universities are more essential than ever before--especially as we move toward this complex environment with divisive discourse pitting some groups of society against others. I like to speak about the idea of the exemplary university meaning that the university in the values and behaviors it adopts intentionally serves as a modern example to the larger society of which we are a part. I really think that we have to stand out as a symbol of using reason to deal with our differences in a respectful manner--of being able to embrace diversity in all dimensions. But that diversity needs to be accompanied by the idea that we can tolerate different perspectives because it also includes diversity of opinion. What can you tell us about your family s medicine tradition I like to joke that strong medicine is a genetic disorder transmitted through generations. I m the fourth generation (physician) on my paternal side. My father was born in Hamburg Germany and escaped when he was 6--his mother father and sister escaped the Nazi regime in the 1930s. My great-grandfather was a doctor in Germany. My grandfather was a doctor and then moved to APRIL 2017 PINECRESTMAGAZINE.COM What do you see in UM s future I made two major commitments in my inaugural speech which I gave in January 2016. One is to create 100 new endowed positions to continue to attract and retain the best faculty. For the 100th anniversary [in 2025] I m committing to raising support for students so that we can meet 100 percent of demonstrated financial need. We are embarking on a planning exercise that we call Roadmap to a New Century with goals to take UM to its next level of excellence. Can you tell us something about yourself that no one knows Not everyone knows that I have a twin sister. When you have to share your mother s womb with another person you develop a strong capacity to share what you have. You learn to accommodate other people. I feel fortunate to have had that opportunity to shape my character. It s also given me an enormous admiration for women. I tell people I ve learned since I was little that my twin is the better half. Women are a much better-rounded version of the human species. 6 4 46 7 What s the best thing about living in Pinecrest I love the community. I m fortunate to live in the Smathers Four Fillies Farm which is a development of UM. It s a beautiful location. I love Pinecrest Gardens and the Sunday farmers market. Almost every Sunday we go there when I m not traveling. In general I ve been very much welcome and we ve felt very much at home. The abundance of green space is something that we appreciate.
