LMGFL.COM MAY 2017 13 EDITOR S letter To this day my best friend points to the minimum-wage jobs that he and I had for about two years in high school--fry cooks at Kentucky Fried Chicken--as his favorite work experience of all time. Even though we ve both enjoyed successes in our respective professional careers I kind of understand where he s coming from. Back then the 92.37 checks we cashed take-home pay that represented about 35 hours on our grease-stained time cards covered every teenage expense from Saturday night movies to general admission concert tickets. Our 19-year-old store manager who was perpetually high on various strains of cannabis would buy us beer if we asked him (and if he was coherent). And the industrial-grade chemicals in the soft soap at KFC kept us from smelling like a bucket of extra crispy when we had dates immediately after work. Plus we could eat as much fried chicken as we wanted--as long as we took a blood oath to never reveal the secret blend of herbs and spices in the Colonel s original recipe. Of course the downside of working at KFC as evidenced by my burgeoning waistline during those years was that we could eat as much fried chicken as we wanted. Decades later I ve come to appreciate culinary terms like moderation and stop eating so much fried food. I ve also come to appreciate thanks to the deft touch of standout chefs throughout South Florida that a dish can be both delicious and good for you. There was a time not that long ago when those notions seemed highly incompatible to me. Any food that did my body good had to be about as tasty as post office packing peanuts right But in the expert hands of A-list chefs from Boca Raton to Miami Beach ingredients that lack a little pizazz on their own can come together with other staples and seasonings in flavor-rich calorie-sensitive creations that continue to redefine the way diners view healthy eating. SOLOMON HEALTHY RESPECT A drienne Grenier commands the 3030 Ocean kitchen with the same vision that crowned her Food Network s Chopped champion in 2012. Understated yet bold is the executive chef s style with no order too tall for the diminutive culinary star. That doesn t mean her job is without its challenges. For starters she has to placate the palates of out-of-town hotel guests at Fort Lauderdale Marriott Harbor Beach Resort & Spa while at the same time appealing to locals in search of a fine-dining experience. Grenier walks that fine line by following her rule of green thumb--ingredients must be fresh. Nothing canned processed or preserved. She s accustomed to constantly changing trends in the restaurant business but Grenier believes that a respect for the ingredients never goes out of style. That s why she warns against any chef that over-manipulates foods charging that dishes laden in heavy sauces and creams are used to make poorquality ingredients taste better. Her own fresh-to-table menu isn t built entirely around calorie-conscious decisions but it s a healthy approach nonetheless. My personal nutrition philosophy is moderation and making sure that everything is made of high-quality ingredients Grenier says. She especially enjoys it when guests order multiple courses of smaller dishes or sample a tasting menu. When I personally think of fine dining it should be an opportunity for a guest to try a lot of different things without being overwhelmed. Asked about the doors he hopes will open in light of his powerful bigscreen debut as Terrel the relentless high school bully in the second act of director Barry Jenkins Moonlight the sophomore at Broward College doesn t hesitate. I m just hoping that I can get hired at Toys R Us he says. Seriously. I ve been calling them forever. Maybe if I interview now I can finally get that job. Decile might be joking but it s hard to tell sometimes. What happened to this unassuming 20-year-old last year is the real-life stuff of Hollywood legend. Before Moonlight Decile s acting r sum consisted of a drama club production at North Miami Senior High School. (He portrayed a character who interviews applicants in a play about how to fail a college interview.) That s it. Any other young actor having caught the break of a lifetime in one of the lowest-budget motion pictures ( 1.5 million) ever to claim Oscar s biggest prize might do anything to stay adrift in the movie s jet stream. But as he thoughtfully answers questions inside the caf at C&I Studios in Fort Lauderdale Decile comes off as someone who won t be defined one way or another by his Moonlight moment. I do have the performance bug says Decile who s also a vocalist rapper and poet (his musical alias is Pat Pandoe). I m exploring my options. But I also understand that Moonlight was a stroke of luck. It could have been anybody hired for that part. The irony is that Jenkins and the casting team hired someone to portray a schoolyard sociopath who himself was bullied as a youngster--and who also grew up without a strong male figure two elements essential to the Moonlight story. Decile was only 2 when his birth father was deported to Haiti after being charged with lewd and lascivious acts against a minor according to his mother Destina--who was only 14 when she gave birth to her oldest son. The only picture I saw of him was a mugshot he says. Shortly thereafter Destina would start a relationship with a man who was in LMGFL.COM MAY 2017 37 Decile s life for the better part of four years. He also was in the United States illegally. Though Destina was trying to help him with the appropriate paperwork he eventually was detained trying to cross the Canada U.S. border and ultimately deported to Haiti. I was always looking for a role model Decile says. Nobody really embraced that. Already quiet and introverted by nature he retreated even further during middle school in Miami. At home he tried to assume responsibility for his siblings (he has a stepbrother now 13 and a stepsister now 11 Destina also has a 15-month-old son)--but his mother didn t want that for him an ongoing source of frustration for Decile. I wanted him to be a student and my son not the man of the house Destina says. At school he was bullied for having long dreadlocks and for being Haitian. That was my first urban school Decile says. The bullying was awful. I had a friend who was just a little effeminate they picked on him mercilessly. The weirdest one for me was being bullied for my descent. I heard Haitians eat cats or Don t do voodoo on me. People wouldn t sit next to me in class or talk to me over being Haitian. Hevia Decile had been cast as Terrel. He spent three days in Miami shooting his scenes for which his mom says he earned about 3 000. At the Miami premiere Decile says his heart was about to burst out of my chest each time he saw his character on screen. His mother meanwhile cried throughout. I only see this outgoing side of Patrick when he performs says his mother Destina who is fielding acting offers as Decile s manager. I had never heard him say a curse word until I saw the movie. It shook me up. I think that s what put me in my shell. An acting class he took in 10th grade at North Miami High would pull him out of it. Everything that Decile had bottled up to that point came pouring out of him in classroom assignments and as part of the drama and poetry clubs. Kids didn t care about how they looked or how they dressed the Fort Lauderdale resident says. They could express themselves. I liked that. Before later transferring to Broward College Decile first attended Florida Memorial University in Miami Gardens. One day during his Intro to Theater class Jenkins and his associates showed up. The teacher was like These guys over here they re important Decile recalls. I m going to have you act out some prompts. Don t embarrass yourself. A few weeks later an unknown number appeared on Decile s phone. He typically lets such calls go to voicemail but this one he answered. It was co-producer Andrew I only see this outgoing side of Patrick when he performs says Destina who is fielding acting offers as Decile s manager. I had never heard him say a curse word until I saw the movie. So convincing was Decile that when Terrel takes a chair to the head from the teen that he has bullied during the climactic scene of the second act the crowd at the Miami premiere stood as one and cheered. Still to this day he isn t entirely certain why Jenkins chose him out of the dozens of actors who auditioned. I don t want to delve into the stereotypical realm but I do have dreads and dark skin so I probably fit a bully he says. They told me that I was talented whatever that means. For him it carried too much baggage. Abandonment. Addiction. Self-doubt. All of which makes the recent opening of Louie Bossi s Ristorante Bar and Pizzeria in Boca Raton his second namesake restaurant that much more meaningful. The name helps--it s catchy says the 49-year-old. I didn t think so at first. But it s not about the name [alone]. It s about what it [represents]. What it represents on Las Olas Boulevard where Louie Bossi s first debuted in June 2015 is authentic Italian cuisine (including pastas made in-house and wines divided by region) in a chic 1940s setting. Getting your name on such a restaurant is like catching lightning in a bottle he recalls an old colleague telling him. It s even more rare when you don t have formal chef training. Long before Bossi had his own place his co-workers at establishments owned by Big Time Restaurant Group (which operates Louie Bossi s) would call him The Natural --mostly out of affection but sometimes out of envy. Bossi who worked in the kitchens at Big Time restaurants for nearly two decades didn t go to culinary school like the rest of the cooks in fact he didn t even attend high school. Unlike his own children--two sons with wife Toni ages 16 and 8 who are both on the honor roll--Bossi wasn t cut out for school. He says his father left his mother and three siblings when he was 7. A year later he learned to cook on a gas stove in New York City to ease the burden on his mom who worked three jobs. It s funny today I wouldn t even let my kids use the microwave [at that age] he says. But things were different back then you had to survive. Bossi realized that he enjoyed cooking--he especially liked the look of the finished product. At lunchtime the kids at school would throw out their lunch bags and follow Bossi home where he whipped up steakand-cheese sandwiches hot dogs and the like. His mother would come home and wonder where the food went. By the time he was 11 Bossi was in the restaurant business. The owner of a local pizzeria called on him while he was playing a video game--someone didn t show up and he needed help folding the pizza boxes and slicing the Where Hyatt Place Hotel 100 E. So I continued with it. I worked in all the local pizzerias. He started cooking in professional kitchens during his early 20s--about the same time he says he embarked on a lengthy battle with drug and alcohol addictions. Looking back Bossi says it s no coincidence. It s one of the most stressful jobs he says. High volume demanding long hours liquor all over the place. Drugs run rampant in restaurants. Everything you re not supposed to do in recovery is what restaurants do. In 1998 he found Crossroads Club a nonprofit facility in Delray Beach that hosts Alcoholics Anonymous Narcotics Anonymous and other 12-step groups as well as a lifemanagement training program. Bossi attended meetings but he fell into a cycle of getting clean and relapsing. You go through the ups and downs--it s like trying to find the right recipe he says. I worked on a tomato sauce recipe until it was right. And then it hits--that s what we re looking for. Same with my life. The moment came almost a decade ago. He and his wife had started their family--and Bossi reconnected with his father. It set me free from a lot of things I had growing up a kid resenting him he says. Resentment is terrible. I love this saying If I was angry at you resentment is like me drinking poison hoping you get sick. Bossi says using alcohol was a byproduct of fears and abandonment issues he s had since childhood. He put down the bottle for good nine years ago and hasn t had a drop since. Bossi is on Crossroads board of directors and fundraising committee. He helped organize Taste of Recovery a culinary benefit and festival celebrating its 35th anniversary. On June 3 from 6 to 10 p.m. at the Old School Square Pavilion in Delray Beach local chefs will cook up savory bites and desserts next to booths with information on services for people in recovery and those looking to overcome drug and alcohol addiction. I want to spend my life giving back to the people who suffer from addiction Bossi says. He calls himself one of the lucky ones. The timing was right. He paid his dues. He pauses in front of the Chicago-brick Italian-imported oven at his Boca restaurant. He says he never thought he d have his own pizza oven. Everything in my life is where it s supposed to be he says. There were things I went through that I had to go through to be where I am today-- [and have] my name on the building. However it s often the simple things that make it one to remember or a catastrophe. Whether you are expecting an intimate crowd of 25 or hosting a big soir e for 800 there are a number of elements besides food drink and entertainment you should consider for your checklist. Plan for plenty of parking. Parking may sound simple--but always make sure you have enough well-lit spaces close enough to your venue. Remember you will have women walking in heels who will consider it a challenge walking over grass and cobblestone to get to the party venue. If you do not have adjacent parking hire a valet company and rent an offcatering tent. Make sure there is enough cleaning staff during and after your party. When parties are flowing with food and drink people tend to leave napkins plates and cups lying around so it is always a good idea to have extra servers or bussers on hand making rounds to clean up during the event. Once it s all over there is also usually a big mess left behind (even if you have had staff keeping the place relatively clean). Make sure you hire a post-event cleaning crew to clean up after the party. This is especially pertinent for office parties so business can resume the next day.
